KARACHI BANS ROAD KI KHAS MUTTON BIRYANI || KARACHI KI FAMOUS BIRYANI BY Urdu Recipe:

INGREDIENTS:

*Oil ( 3/4 cup ) + ( 1/4 cup )
*Mutton Mix Meat (750gm) (95% boiled)
*Sela Basmati Rice (750 gm) (80% boiled)
*Grinded Paste
{ Tomatoes (6-7 large), Yougert (1cup OR 250 gm), Green Chillies (12-15) }
*Ginger Garlic Paste ( 2 tbsp )
*Red Chilli Flakes ( 2 tbsp )
*Turmeric ( 1/4 tsp )
*Salt ( 3 tsp heap )
*Chicken Stock Cube (1)
*Cumin ( 1 tbsp) (roasted & fine crushed)
*All Spice Powder ( 1 tsp )
*Plum (10-12) (soaked)
*Grinded Powder
{ Anise Star(1),Black Cardamom(1), Green Cardamom(4), Nutmeg(1/4 tsp), Mace(1/4 part) }
*Mint Leaves Chopped ( 1/2 bunch )
*Coriander Leaves Chopped ( 2 tbsp )
*Lemon Sliced ( 1 )
*Brown Onion ( 1/2 cup )
*Red Food Colour (1/4 tsp) (Sprinkle)
*Yellow Food Colour (1/4 tsp) (Sprinkle)
*Kewra Water ( 1 tbsp )


METHOD:

STEP # 1

Mutton Mix Meat - 750 gram
Wash mutton properly then add 2 cups of water, salt 1/4tsp, turmeric 1/4tsp, ginger garlic 1tbsp, cloves 3, black pepper 5, cinnamon stick 1" of 1 & cumin 1/2tsp...cook with low flame and Mutton boil 95% done.


STEP # 2

Sela Basmati Rice - 750 gram
Wash rice properly and soak it for half an hour then boiled with full of water, salt (3.5tbsp full), black cumin (1tsp), whole spice (cloves 4-5, black pepper 8-10, anise star 2, cinnamon stick 2" of 1, green cardamom 3-4), vinegar 2tbsp & oil 2tbsp... Boil the Rice 80% done then discard rice water & separate rice in a sieve.



3.Take a pan add Oil (3/4 cup), Grinded Mixture {(tomatoes(6-7 large),green chillies(12-15),yougert(1 cup)}, Ginger & Garlic Paste ( 1tbsp ), Red Chilli Flakes ( 2tbsp ), Turmeric (1/4 tsp), Cumin (1tbsp) (Roasted & Crushed), Salt (3 tsp full), Cube (1) & All Spice powder (1/2 tsp). Mix well and bring a boil. Cover & cook untill masala fry & oil come on top (med flame)
4.Now add boiled mutton mix meat (750gm), All Spice Powder (1/2 tsp), Kewra Water (1 tbsp), Grinded Powder{ Anise Seed (1),Black Cardamom(1), Green Cardamom(4), Nutmeg(1/4tsp), Mace(1/4 part) }. Mix well, cover & cook untill Meat become tender & oil come on top surface (low flame).
5.Add Lemon sliced (1), Coriander Leaves Chopped (2tbsp) , Mint Leaves Chopped (half bunch), Plums (10-12) (Soaked), 80% Boiled Rice (750gm), Brown Onion (1/2 cup), Sprinkle Red & Yellow Food Colour (1/4 tsp,1/4 tsp) and Oil (1/4 cup) pour on top then cover. Take a simmer plate OR Tawa on stove then pan put on it, give steam 5 mins at hight flame then turn very low flame (simmer) for 20 mins.
6.BANS ROAD KARACHI KI KHAS MUTTON BIRYANI is ready to serve with Raita & Salat.
